The Michele Gentili guide

CEO Michele Gentili is an SCA certified roaster.

He personally oversees the roast curve development and supervises the entire production line, ensuring consistency and control at every stage.

His expertise is a core part of our working method.

how we work

We continuously test samples of coffee varieties, and only about 10% are purchased for use in our blends and single-origin coffees. In phase 2, the best roasting curve is studied and then replicated in the production roaster (phase 3) and stored for aging in stainless steel silos (phase 4). After the necessary time, the varieties are dosed to form the blend recipe (phase 5) and shipped within two weeks of roasting (phase 6).
